Storing Salads

Salads are highly perishable and deteriorates rapidly with increasing temprature. The respiration rate increases greatly and storage life decreases concomitantly as the storage temperature increases over the temperature range from 32 to 75 F.
Salad is easily damaged by freezing, so all parts of the storage room must be kept above the highest freezing point of salads (31.6F)
So the salads are best stored at 32 F and 98 to 100% relative humidity.
