Storing Baby Vegetables

There are several methods of preserving vegetables, including refrigeration, cold storage, freezing, canning, drying, marinating, and so. It is better to consume vegetables immediately and keep any surplus in the refrigerator.

Storing Beans

Place fresh bean pods, unwashed in a perforated plastic bag in the refrigerator, where they will keep for about 2 to 3 days.

Storing Beets

Fresh beets that still have their roots and their leaves will keep for 2 to 4 weeks in the refrigerator. Stored in soil or in a cellar, they will keep longer, but have tendency to harden if left for to long.

Storing Carrots

Carrots have good storage qualities. Stored in the refrigerator, they will keep for 1 to 3 weeks, but is it is best to wrap them first, as they lose moisture quickly when exposed to air. Place them in perforated plastic bag or wrap them in a paper towel to prevent the formation of condensation, which causes them to spoil.

Storing Cauliflower

Cauliflower can be kept unwashed in a perforated plastic bag in the refrigerator for about 10 days. Cooked cauliflower spoils more quickly and will keep for only 2 to 3 days. Cauliflower can be frozen after being blanched for 3 minutes in boiling water. However, this will make it more watery once it is thawed.

Storing Chard

Chard can be stored unwashed in a perforated plastic bag in the refrigerator for a maximum of 4 days. Like spinach, the leaves freeze well after being blanched for 2 minutes; the stalks do not take well to freezing.

Storing Fennel

Fennel will keep in the refrigerator for about 1 week, but it has tendency to become stringy and to lose flavor as it ages. Fennel may be frozen, however, it tends to diminish its flavor significantly.

Storing kale

Kale could be best stored refrigerated with its leaves closed in a perforated plastic bag. It will keep for 5 to 10 days, but tastier and less bitter when consumed as soon as possible. Kale can also be frozen after being blanched for 2 to 3 minutes, or until the leaves become slightly soft.

Storing Kohlrabi

Stored in a perforated plastic bag, kohlrabi will keep for about 1 week in the refrigerator. The leaves remain fresh for only a day or two and should be stored separately. Freezing is not the best method of preserving this vegetable, as it alters its texture and in the case of pureed kohlrabi, its color.

Storing Leeks

Leeks can be stored in the refrigerator for about 2 weeks. Once cooked this vegetables should not be kept for more than two days. Leeks can be frozen, once frozen you can keep them for about 3 months. For maximum flavor cook them without thawing.

Storing Squash

Summer squashes are easily damaged and should be handled with care. Place them in a perforated plastic bag in the refrigerator where they will keep for about 1 week. Wash them just before using them.

Storing Turnips

Turnips will keep, unwashed and in a perforated plastic bag for 1 to 3 weeks in the refrigerator. The leaves should be removed and stored separately in a perforated plastic bag; they will keep for about 4 to 5 days in the refrigerator

This vegetable freezes well after being blanched for a couple of minutes or cooked or pureed form.
