![]() DescriptionCooking with edible flowers is not a new trend. During medieval and Elizabethan times, the use of blossoms in food was common place. Today this nearly lost art is enjoying a revival. The petals of many flowers must be removed from the calyx before being eaten. The calyx may be very bitter or too large and tough to eat. Most flowers sold by florists have been chemically treated and should not be consumed. Many nurseries treat young flowering plants with systemic fungicides and pesticides, which are not safe to eat. These chemicals can remain with the plants throughout their life cycle. Not all flowers are edible, and indeed some are poisonous. Also be aware that if a flower is listed as edible, it does not necessarily mean that the rest of the plant is safe to eat.
