Lemon grass is sold fresh. It is often used in herbal teas. When buying fresh lemon grass, choose specimens with a firm bulb.

Lemon-grass oil contains geraniol and citral, which give the plant its lemony fragrance.

Serving Ideas

Lemon grass is more flavorful fresh than dried. Use it sparingly, particularly if you are unfamiliar with its taste.

Lemon grass goes well with ginger, chile, coconut, garlic, shallots and green pepper. It is particularly popular in Southeast Asia, where cooks use it to season a wide variety of  foods, including soups, vegetables, curries, poultry, shellfish, fish and marinades. It is often used to make herbal tea.

Storing

Keep fresh lemon grass in the refrigerator. Wrap it in slightly damp paper towel to help it stay fresh longer. Wash it just before using it.

Freeze it whole or chopped;blanching is unnecessary.
