Description

There are over 100 varieties of beans, varying in shape, color, flavor and nutritional value. Pods of most varieties can be eaten fresh before they reach maturity. Pods can be green, yellow or purple. Long and slender, the pods can be straight or slightly curved.

Beans are an excellent source of potassium, magnesium, iron, thiamine, source of vitamin A, ,C, and  folic acid. The bean is said to act as a diuretic, tonic and cleanser the blood and protects against infection.

Preparing

Fresh bean pods should be washed just before using them; remove the top and tail and any strings.


Serving Ideas

Fresh beans are most commonly eaten cooked, either warm or cold. In addition to their frequent use as a vegetable side dish, they are added to salads, soups, stews, and stir-fries. They are delicious marinated, baked au gratin or topped with sauce or vinaigrette.  Their flavor blends particularly well with tomato, thyme, oregano, rosemary, mint ,  marjoram, mustard , aniseed , nutmeg and cardamom.

Storing

Place fresh bean pods, unwashed in a perforated plastic bag in the refrigerator, where they will keep for about 2 to 3 days.
